    Nicky Farms Venison

    Once known as "the meat of Roman emperors," Fallow venison is fork tender and finely textured.  Special conditions along Oregon rivers make Oregon Fallow venison mildly gamey--like beef, but with very little fat.  Our Oregon Fallow Venison is the most gourmet way to know autumn is here: it's available fresh from September to November, and frozen while supplies last! 

    Fallow deer are small game animals that, due to their gregarious nature, have proven to be readily adaptable to a variety of farm environments. Adult deer stand approximately three feet tall with the does weighing only 120 pounds and the bucks weighing up to 220 pounds each. All Nicky Farms Fallow venison are raised in an open range environment protected by seven foot perimeter fencing.

    Nicky Farms Elk

    One of the highlights of our busy autumn season is the arrival of our Roosevelt elk.  These animals are the biggest elk on the continent of North America.  The males are just under 1000 lbs and have been known to grow as big as 1,300 lbs in the Alaskan wild.  They are raised free range on Western Oregon farms, where they can freely roam the hills and streams that dominate our landscape.  This peaceful life, along with the natural terrain they are used to, make Roosevelt one of the richest, yet leanest proteins we offer.  It is a highly sought after animal, so be sure to call the Nicky USA office and reserve your cuts in August.  We stock Roosevelt Elk fresh from September to November--and in the freezer, while supplies last.  

    To provide elk year round we offer Rocky Mountain and Manitoban elk, raised free range on pristine Northwest ranches. Their meat is lean, tender, juicy and high in protein and iron. Nicky Farms utilizes the whole animal to produce steaks, roasts, offal and trim.

    To produce bulk ground, patties and specialty sausages we use primarily Northwest grown, lean elk trim.

    American buffalo once dominated the landscape of this continent from Canada to Mexico; they are one of the largest bovid species behind the Italian Chianina and the Asian water buffalo.  Through the over-hunting of the species and the encroachment of their plains the vital stock hit near extinction.  Due to the hard work of many great ranchers bison numbers have significantly risen over the last thirty years.  Oddly enough, sometimes the best way to save an endangered species is to eat it, so help save buffalo and call Nicky USA today!

    Buffalo has the huge red-meat richness and the flavor of beef with considerably less calories and cholesterol.  Because we use and offer the whole animal, chefs have a wide variety of cuts to choose from: from the elegant loin cuts suited for the grill or sauté pan to the earthy braising cuts destined for the slow cooker.

    Our water buffalo are raised locally in Oregon.  They are an Asian species, but by no means are they suited for Asian cuisines only.  The similarity to conventional beef makes these large, beautiful animals applicable in any cuisine through the variety of cuts we can offer from the whole animal.  The Asian water buffalo is one of the largest bovids in the world, but we buy younger animals in order to offer the tenderest water buffalo you can buy.

    Mishima Five Star Kobe

    Mishima Ranch Wagyu Beef maintains high quality standards by maintaining a higher percentage of Wagyu genetics in its production system. Many of the cattle in the Mishima Ranch system are 75% or 87.5% Wagyu genetically. The results of this are a higher average marbling score and more top graded product. Before Mishima purchases any cattle from a source they personally inspect the genetics of the herd, the feed rationing program, the feeding and feed conditions, the health records and many other factors to make certain that the cattle will perform well in their system.  All cattle are raised in the Japanese method--proven for its high quality and consistency. This is a very clean and low stress environment. All the cattle are fed and live in covered conditions. The feed is kept indoors to keep it clean, dry and pest free. The feed is 100% vegetarian, no added animal fats or proteins. No hormone implants or hormonal feed additives are used. Mishima cattle are fed for a minimum of 365 days, typically 425 days or more.

    What Makes Tails & Trotters Pigs Unique
    The quality of life of the pigs is of paramount importance to the quality of all the Tails & Trotters products.  They work closely with a family farm in Washington that produces the pigs.  The farm is certified by the Food Alliance for meeting comprehensive standards for sustainable agriculture and business practices.

    What They Feed the Pigs
    Their pigs are fed a diverse diet that is specifically formulated to their growth needs. Many of the grains are raised by their grower including wheat, barley, triticale, peas, and flax.  Their grower has third party verification that guarantees its feeds are GMO-free, and we never use corn or soybeans.  Their pigs are never administered antibiotics, hormones, or growth stimulants in ANY form.

    Hazelnuts
    They're what make Tails & Trotters pork so special!  Traditionally, pigs produced for prosciutto are fed a special “ finishing” diet for their last 60-90 days where a large portion of their feed is replaced with acorns.  While the Northwest isn’t good acorn country, it is renowned for its hazelnuts!

    Named for their fluffy plumage, which is said to be soft as silk, Silkies are a very distinctive breed of chicken.  The flesh and bones are a dark blue color, almost black.  The birds are thought to be native to China or Southeast Asia, and many Asian countries consider them a delicacy.  The stock made from Silkies was thought to have healing properties, according to traditional Chinese medicine.

    Groupe Grimaud, the former parent company, has been raising Muscovy ducks since 1965. To take advantage of all this experience and ensure the genetic quality of our products, French consultants continue to visit Grimaud operations every year. The birds are barn-raised without the use of steroids, antibiotics or growth hormones. Grimaud doesn't hurry nature: they grow their ducks for 70-85 days compared to 42-45 days for most Pekin ducks. This allows the bird to fully mature. Feed is carefully selected for a balanced diet and for the best possible yield and flavor.

    Muscovy duck has a unique taste: it is lean, meaty, tender and flavorful. A 4 lb. Muscovy has the highest yield of any duck available and 50 percent more breast meat than other ducks. Muscovy breast meat is 99 percent lean and the skin of this duck has 50% less fat than the Moulard or Pekin varieties!

    Sonoma Saveurs

    While they are best known for their foie gras (and co-owner Junny's amazing foie terrine), Sonoma Saveurs sells more than just the liver from their ducks.  The ducks used for their foie gras production are a crossbreed of Pekin and Muscovy ducks--which makes for very delicious eating.  The breasts are known as "magret" and are larger and more flavorful than common pekin breasts due to the fact that the animals have been fed a diet of whole cooked corn.  Sonoma Saveurs also produces moulard legs which are ideal for confit, but can also be braised or grilled.  They also sell rendered duck fat as well--which is used is various applications such as confiting, frying and sautéing.

    Hudson Valley Farms

    Hudson Valley Foie Gras is the largest supplier of foie gras in the United States.  Izzy Yanay and Michael Ginor founded the company in 1989 and came together with a common goal in mind.  They wanted to build a company able to help stabalize foie gras pricing, ensure steady supply and increase public knowledge about the product.  They also had the unique concept of having all stages of production--from breeding to feeding to packaging--existing in one location.

    In 1998, Hudson Valley Foie Gras estimated that they produced more than 220 tons of foie gras each year.  However large the company gets, the ducks are still handled with the utmost care--they are cage-free, allowing them social interaction, stress reduction and exercise.  The comfort of the ducks is best visualized in their ease with their feeders.  They maintain a very small "flight zone" (which is much like personal space to humans) with their feeders, which indicates their lack of fear and stress.  A well cared for animal produces the highest quality of foie gras, something that Hudson Valley Foie Gras takes great pride in.

    Our pheasants are raised in Wisconsin by MacFarlane Pheasant, a company that is proud to offer antibiotic and hormone free birds.  Pheasant's popularity is due to its history as a sport bird and the festive nature that pheasant brings to the dinner table culturally.  Pheasant means celebration.  They are very lean birds, so the chef must be careful to not overcook them.  They are delicious pan-seared, roasted whole or braised--we stock 2-2.5lb birds, 3-3.5lb birds and airline breasts.

    Guinea fowl, or Pintade, is a small bird similar to chicken, with a slightly gamier flavor.  They are still gaining popularity in the United States, but in Mediterranean countries such as France and Italy they are the special occasion bird, what Italian and French grandmothers might roast for big family Sunday dinner.  They are desirable for their relatively complex flavor and high yield - they have much less tendon making for less waste.  These birds are raised for us by Grimaud Farms and are aintibiotic and hormone free.  Each bird averages just under three pounds.

    We have a small stock of Oregon quail available every other week, and the rest of our supply comes from Manchester Farms--an industry leader in the quail business.  Available whole, semi-boned, or grill-ready on a skewer, these juicy little birds are incredibly versatile. Processed at 6-8 weeks of age with an impressive breast size, they come either fresh or frozen. And unlike most of our competitors, ours are hand-boned and their tender meat can be braised, fried, sautéed or roasted.

    One of the highlights of our busy autumn season in the arrival of our Roosevelt elk.  These animals are the biggest elk on the continent of North America.  The males are just under 1000 lbs and have been known to grow as big as 1,300 lbs in the Alaskan wild.  They are raised free range on Western Oregon farms, where they can freely roam the hills and streams that dominate our landscape.  This peaceful life, along with the natural terrain they're used to, make Roosevelt one of the richest, yet leanest proteins we offer.  It is a highly sought after animal, so be sure to call the Nicky USA office and reserve your cuts in August.  We stock Roosevelt Elk fresh from September to November--and in the freezer, while supplies last.  

    To provide elk year round we offer Rocky Mountain and Manitoban elk, raised free range on pristine Northwest ranches. Their meat is lean, tender, juicy and high in protein and iron. Nicky Farms utilizes the whole animal to produce steaks, roasts, offal and trim.

    To produce bulk ground, patties and specialty sausages we use primarily Northwest grown, lean elk trim.

    Once known as "the meat of Roman emperors," Fallow venison is fork tender and finely textured.  Special conditions along Oregon rivers make Oregon Fallow venison mildly gamey--like beef, but with very little fat.  Our Oregon Fallow Venison is the most gourmet way to know autumn is here: it's available fresh from September to November, and frozen while supplies last! 

    Fallow deer are small game animals that, due to their gregarious nature, have proven to be readily adaptable to a variety of farm environments. Adult deer stand approximately three feet tall with the does weighing only 120 pounds and the bucks weighing up to 220 pounds each. All Nicky Farms Fallow venison are raised in an open range environment protected by seven foot perimeter fencing.
