The Best Yet

This year's Wild About Game competition was a huge success. We had a great time with our guests, chefs, and sponsors up at Timberline Lodge. A big congratulations to Shane Ryan of Matt's in the Market (SEA) for securing the Judges, Protein Category, and People's Choice wins! Other cateogory winners included: Jin Soo Yang (Bamboo Sushi PDX) for Squab, Jason French (Ned Ludd PDX) for Goat, and Josh Scofield (Toro Bravo PDX) for Elk! In addition, we are excited to announce your raffle ticket purchases earned over $1,500 for The Portland Kitchen (TPK) - thank you to all who participated!

Ancient Heritage Creamery :: Ancient Heritage Dairy is a sheep dairy nestled at the foothills of the Oregon Cascades in the east shadow of Mt. Jefferson in Central Oregon. They specialize in hand produced cheeses made from both sheep and cow milk.  Their cheese making process encompasses the best of old technique and modern method.

Anderson Ranches Oregon Lamb :: The Anderson's have been raising Oregon grass fed lamb for 5 generations,  selectively breeding sheep for the highest quality of meat-producers.

Aria Gin :: Aria Portland Dry Gin is a classic English inspired American gin. Aria is rich, yet soft, full bodied and boldly aromatic. Aria is hand made and batch distilled for depth, complexity, and balance.

Bull Run Distilling Company :: Bull Run is part of a new group of artisans helping put Oregon craft spirits on the map with a line of spirits that stand as well neat as they do in your favorite cocktail.

Case Study Coffee :: Case Study Coffee offers coffees at the height of their season. With their network of importers, they source from a selection of thousands of farms, choosing that seasons best coffee. They operate two coffee shops in Portland, OR.

Beam Spirits::Beam Suntory is the third largest premium spirits company in the world, the leading spirits company in Japan and the largest U.S.-based spirits company.

Bee Local ::  Portland based Bee Local is the only honey producer to offer terroir-based honey varieties. Unique micro-batch offerings have complex flavor profiles that reflect the forage available in specific neighborhoods and regions.

Burnside Brewery :: Burnside Brewing Co. is located in Portland, OR. It opened its doors in 2010, the vision was concise. Focus on easy to drink beers that accompany and enhance the culinary experience.

Champagne Nicolas Feuillate :: Nicolas Feuillatte created Champagne Nicolas Feuillatte in 1976 as an exclusive Reserve Champagne that today remains the guardian of Champagne Nicolas Feuillatte's quality and style. In 1986, Nicolas Feuillatte created a partnership with the Centre Vinicole de la Champagne, the largest association of growers in Champagne, situated in the heart of the vineyards, near the small Grand Cru village of Chouilly on the outskirts of Epernay.

CHOP :: It is the goal of Chop Butchery & Charcuterie to bring back the institution of a neighborhood butcher shop.  Their meats are hand crafted and sourced with care.  From award winning pickles to their USDA curing facility where they make  salami to winning The Good Food Awards for pate, they are constantly striving for excellence.

Classic Foods :: Classic Foods is an artisan specialty foods manufacturer and distributor in Portland, Oregon serving restaurants, hotels and institutions with regular deliveries in the Portland Metro, Salem and Yamhill County areas. They are Oregon's fresh pasta specialists, with an emphasis on specialty ravioli made with local, seasonal ingredients.

Commons Brewery :: The Commons Brewery is a small craft brewery located in Southeast Portland, Oregon. They are inspired by European brewing tradition and Northwest grown ingredients. They take a very hands-on approach to brewing our small batch beers.

Double Mt. Brewery :: Double Mountain was founded in 2007 with a clear mission: make great beer for craft beer fans. Located in Hood River, OR Double Mountain prides itself on being a “brewers’ brewery”, with an uncompromising focus on beer quality.

Erath :: Erath wines are an expression of the land that the winery has cultivated for more than 40 years, longer than any other winery in the Dundee Hills of Oregon. The red, iron-rich Jory soils, combined with gentle breezes and warming sunshine of a marine climate, have bestowed upon Dundee a terroir of note. It has given rise to the handcrafting phenomenon, and the art of Pinot.

Estancia Grass fed Beef :: Estancia Cattle are raised on, and finished on grass producing a sustainable, healthy and tasty beef.

Fermin :: Located in picturesque La Alberca, one of the oldest rural villages in Spain, Fermín has been raising and bringing to market the highest quality pork, Ibérico de Bellota, since it was founded by the Martín family in 1956. Today, Fermín remains a family-run business and is the leader in Ibérico de Bellota husbandry and production and is the first producer in Spain to receive USDA approval.

HOTLIPS Soda :: HOTLIPS Soda is real fruit soda pop. Picked-ripe fruit is cooked in open kettles, bringing out the nuanced flavors. Seeds are filtered out, but not pulp, then sparkling water, pure cane sugar (except pear and cranberry – No sugar added!) and organic lemon juice are added.

Jacobsen Salt Co. :: Jacobsen Salt Co. is lead by Proprietor Ben Jacobsen, who strives to create the best finishing salt America has to offer. Harvested from the cold waters of the Oregon Coast, Jacobsen Salt Co.’s pure sea salts have gained much critical acclaim for their beautiful taste, texture, and appearance. Used by chefs and home cooks around the world.

La Belle Farms :: La Belle Farm is one of only three Foie Gras Producers in the United States.  Located on a 43 acre farm in Sullivan County, NY, the company has been in operation for 10 years. La Belle Farm also produces distinctive tasting Foie Gras that stands out from both U.S. and foreign competition.  Its Foie Gras growing process yields excellent taste while at the same time rendering off less fat than other products.

Mama Lil's Peppers:: For almost twenty years, Lil’s son Howard, the founder of Mama Lil’s, put the same love and energy into making Mama Lil’s one of the northwest’s favorite artisan food companies as Lil put into growing and making the pickled peppers in oil she served her family at every meal  - eggs, sandwiches, pastas, and Howard’s favorite, as a garnish to steak.  Mama Lil’s peppers are grown and made in Washington’s Yakima Valley.

Manchester Farms :: Manchester Farms is the oldest, most respected, and largest producer of farm raised quail in the United States. It has been family-run for thirty five years.

The Meadow: The Meadow is a place where the beautiful, the delicious, and the unexpected are brought together for your pleasure. They specialize in artisan salt, the world’s great chocolate bars, bitters and other gourmet items for the bar and kitchen.

Mt. Townsend Creamery :: Mt. Townsend Creamery works with local farmers to handcraft a product that captures the character of the Olympic Peninsula, reinvigorating old world traditions to produce delicious, artisan cheeses. 

Nueskes Applewood Smoked Meats :: Nationally-acclaimed, award-winning Applewood Smoked Specialties created by the Nueske family in the village of Wittenberg, Wisconsin.  Nueske's Applewood Smoked Meats has been creating fine nationally-acclaimed Applewood Smoked Meats since 1933.

Olympic Provisions :: Olympic Provisions is a USDA approved charcuterie shop in Portland, Oregon.  Their focus right now is all things pork!  They butcher, cure, ferment, stuff, dry, cook and smoke almost every cut of the venerable pig.

Oregon Brand Management :: Oregon Brand Management is a locally-owned wholesale brand management company that provides sales and distribution for some of Oregon’s premier wineries as well as small estates from Europe.  

Painted Hills Natural :: Painted Hills Beef was founded in Wheeler County, OR . They strive to provide high quality beef, which is pasture raised and grain finished, without added hormone or antibiotics.

Palmetto Pigeon :: Founded in 1923, Palmetto Pigeon Plant has grown into one of the largest producers of squab, poussin, cornish game hens, and silkie chickens in the world. 

Sasquatch Brewery :: Sasquatch beers are brewed on site from a seven-barrel system with the quality ingredients and care that Oregonians expect. Sasquatch prides themselves on being a friendly place for neighbors to unwind and enjoy great food and great handcrafted beer with family and friends.

salt & straw :: salt & straw ice cream is handmade in small-batches using only all-natural dairy with the best ingredients Oregon has to offer and imported flavors from around the world. Their ice cream is made with 17% butterfat, very little air in the churn process, and a low sweetness level...so their unique flavors can shine through!

Shun Knives :: Since the 13th century, Seki City has been the heart of the Japanese cutlery industry. For more than 100 years, it has also been home to the Kai Corporation, the makers of Shun fine cutlery. Inspired by the blade-making traditions of ancient Japan, today’s highly skilled Shun artisans produce blades of unparalleled quality and beauty.

Snake River Farms Kobe Beef :: Snake River Farms produces American Style Wagyu (Kobe) Their family-owned business is over 15 years old and started with a small herd of Wagyu cattle from the Kobe Region of Japan. They also produce American Kurobuta Pork, that’s 100% pure, all-natural Berkshire pork, raised by a small network of family farmers

St. Maries and Ankeny Lakes Wild Rice :: For centuries, Native Americans in the northern and eastern United States depended on wild rice for 25% of their staple diet.. St. Maries and Ankeny Lakes Wild Rice grow, process, and sell wild rice grown in the Oregon and Idaho.

Starvation Alley Cranberry :: Starvation Alley is located on the Long Beach Peninsula in Southwest Washington State. In October 2013, their 10-acre farm became the first in the state to transition to WSDA Certified Organic production (There are approximately 1700 acres of cranberries are grown in WA).  They make their juice using a hydraulic juice press.

Tails & Trotters :: Inspired by the regional cured hams of Europe, Tails & Trotters is the Pacific Northwest’s first signature pork producer developed from pork finished on local hazelnuts.  They raise their heritage hogs in Ephrata Washington in partnership with Pure Country Pork, and butcher them at Nicky USA’s Portland USDA facility.

Make A Weekend of It!

Make a weekend of it and join us for a pre-event Wild About Game Dinner at Timberline Lodge on September 6, 2014. The multi-course menu features dishes from Timberline’s Executive Chef Jason Stoller Smith and last year’s Wild About Game winner, Chef Aaron Barnett of St. Jack. Save the Date for Nicky USA's Wild About Game 2014!

We are returning to Timberline September 7th, 2014 for the Northwest's meatiest culinary celebration. Wild About Game celebrates farmers, butchers and purveyors of specialty game and high quality meat, and the chefs who use their produtcs. The full day event will include a head to head cooking competition, artisan marketplace and an industry-insider persepctive on the Northwest culinary scene.

The 2014 Game coooking competition puts Portland chefs against Seattle chefs in four rounds. At the end of each round attendees will be able to step up, taste their dishes and vote for their favorite. This year's stellar line up includes:
