NICKY FARMS RABBIT

Rabbit is the product that our company’s reputation was built on. Farm raised on a diet of corn, soy and wheat supplemented with alfalfa, Nicky Farms rabbit is  well know for its unsurpassed flavor. For optimum tenderness, our fryer rabbits are processed between 9-12 weeks of age.  All our fryers are guaranteed antibiotic and hormone free.  We produce whole rabbits and cut-up packs throughout the year.

NICKY FARMS SAUSAGE

As part of Nicky USA’s commitment to using the whole animal while providing the highest quality meat available, we’ve created our own line of specialty sausages bringing old world craftsmanship together with creative recipes and a passion of innovation.  Our sausages combine Nicky Farms game with Northwest ingredients and our styles include Venison-Blueberry, Water Buffalo Bratwurst, and Elk-Huckleberry. All of our unique sausages come in one pound packs of four sausage links.

NICKY FARMS GOAT

We supply goat from our own farm and supplement with goat that comes from the same producer as our Oregon lamb: Anderson Ranch, so you know they are raised the right way.  That means happy goats that are treated humanely and never treated with antibiotics or growth hormones.  Anderson Ranch goats roam the verdant pastures of the Willamette Valley; they are generally smaller than lamb, but pack big flavor.

Buffalo has the huge red-meat richness and the flavor of beef with considerably less calories and cholesterol.  Because we use and offer the whole animal, chefs have a wide variety of cuts to choose from: from the elegant loin cuts suited for the grill or sauté pan to the earthy braising cuts destined for the slow cooker.

NICKY FARMS WATER BUFFALO

Our water buffalo are raised locally in Oregon.  They are an Asian species, but by no means are they suited for Asian cuisines only.  The similarity to conventional beef makes these large, beautiful animals applicable in any cuisine through the variety of cuts we can offer from the whole animal.  The Asian water buffalo is one of the largest bovids in the world, but we buy younger animals in order to offer the tenderest water buffalo you can buy.

NICKY FARMS WILD HAWAIIAN VENISON

Nicky USA is thrilled to introduce a truly unique, wild and delicious product from the Hawaiian Islands. Our Nicky Farms Wild Hawaiian Venison is the first time that truly wild venison is offered for sale wholesale. The deer are harvested under strict USDA field protocols to ensure safety and quality.

Working closely with our partners on the islands, Maui Nui Venison, we are able to present a wide selection of cuts at prices competitive to venison from other sources. We are excited to offer our restaurant & retail customers domestic wild venison with great flavor and a unique story.

King Kamehameha V imported a small herd of Axis deer from India in 1868 to Moloka’i. They were released to fend for themselves and over time some were transported to Maui and Lana’i. The Hawaiian climate and environment suited the deer well and the wild population is now stands over 100,000.

Unfortunately, the Hawaiian Islands are among the endangered species capitals of the world and the deer pose a serious environmental threat. They cause substantial ecological damage by overgrazing mountain slopes, damage critical riparian areas, introducing invasive plant species. Water run off due to the deer’s activities means less water in aquifers and erosion into the rivers washes into the ocean killing coral reefs and adversely affecting fisheries.

The deer are an agricultural threat as well. In addition to feeding on sensitive & endangered native plants, they have a voracious appetite for the coffee, fruits and vegetables of the island’s farmers and compete with ranchers for grass. Harvesting the deer is critical to protecting both the environment of the islands and the livelihoods of the islanders.

Our Nicky Farms Wild Hawaiian Venison offers our customers a taste of exceptionally tender and flavorful wild game meat, while helping to preserve the unique flora and fauna of the Hawaiian Islands. Not many foods can match that.

NICKY FARMS ELK

One of the highlights of our busy autumn season is the arrival of our Roosevelt elk.  These animals are the biggest elk on the continent of North America.  The males are just under 1000 lbs and have been known to grow as big as 1,300 lbs in the Alaskan wild.  They are raised free range on Western Oregon farms, where they can freely roam the hills and streams that dominate our landscape.  This peaceful life, along with the natural terrain they are used to, make Roosevelt one of the richest, yet leanest proteins we offer.  It is a highly sought after animal, so be sure to call the Nicky USA office and reserve your cuts in August.  We stock Roosevelt Elk fresh from September to November--and in the freezer, while supplies last.

Raised on our very own farm in Aurora, OR, our partridge are a game season specialty. Available in October and November, these medium-sized birds are flavorful without being gamey. We raise about 600 annually so be sure to reserve your birds well in advance.
